Among SRM, KIIT and Manipal University which one should I opt for CSE or ECE?
Which college would provide me with a better opportunities and why?

Go for Manipal University. It is the best choice. Manipal has greater exposure than KIIT and SRM.

Firstly, These three are Private Universities. For Engineering - SRM University, Chennai, is the best. For Medical - Manipal University. Finally KIIT, Bhubaneswar, is good for both medical as well as engineering. KIIT university, not in the list of top 5 university for engineering courses. As I told you, SRM, Chennai is the best.

SRM having multiple campuses only the Main Campus is as par with competition rest others are struggling now. Manipal University is situated in Manipal it will have a location issue while travelling a lot. It's placements are also good. KIIT University is situated in the central city only in Bhubaneswar. The market is nearby. IT Hub is nearby, housing TCS and mega IT Giants. So choose wisely.
