Well, owing to a new course in Amity University, Mumbai, you can't expect much of placements as of now, as there are other good law schools such as Symbiosis, GLC etc. in the same region and this lowers the prospect of on campus placements as of now, as those institute have a set reputation for years now and it cannot be changed so easily.
However, Amity University has some recognition in terms of education and it's not an unknown name as such.

Amity University is known for its quality education. The Mumbai campus is very newly established and, thus there are no placements made yet. But, the college will surely have good placements as their Delhi Campus.
Answering to your question as to which university would be better amongst Pune, Mumbai and Amity, I would suggest you to option for Pune University. ILS Law College under the Pune University is one of the top law colleges in India and has good placements as well. Next would be Mumbai University and lastly Amity University as it is new and has not got its roots strong with the Mumbai Campus.
