What is your opinion about joining for CSE at LPU Punjab for an affordable fee vs joining VIT Vellore with a much more expense?

Both LPU Punjab and VIT Vellore are good private universities and doing well. Based on my experience, I would recommend LPU as they provide good scholarships to all the students. I am also from a middle-class family and I got a good scholarship at LPU. LPU has been ranked again by the Times Higher Education World University Rankings 2023 on 23rd place amongst Top Universities in India (Both Government & Private)
LPU offers part-time job opportunities as well. I did a part-time job and managed my monthly expenses. You can work 20 hours per week and can earn 50100 INR per hour. I hope this helps

The B Tech CSE programme primarily deals with the development as well as designing of computer software and hardware processes with a strong focus on courses related to algorithms, computation, programming languages, programme design, computer hardware, computer software, databases, operating systems, comput...more

Vit is better than LPU in all aspects but it depends on the fact whether the fee is affordable or not.
