Which one to prefer IIIT, Allahabad for IT or NIT, Allahabad CSE or IIT Kanpur for mechanical? My JEE Main rank is 1209.

Again I would like to point out the same thing that the above ranks must belong to the current admission session which is most likely not the case as this year's Mains and Advance have yet not been conducted and the last year's ranks will not be taken into account now.
If however, you find it useful, from the given options I'd suggest that if you can opt for mechanical. There is no comparison and IIT K is the best bet but if you have a strong preference for CSE/IT then both the options are good and doing equally well with excellent placement record. Due to a slightly better ranking, you may give minor preference to NIT.

First of all, congrats, and you have decided superior colleges.
If interested in computer to for NIT, and if not interested, go for IIT Kanpur. Mechanical and CSE are both the fields of different route. NIT CSE will be good. Moreover, you specified IIIT Allahabad IT, it is again a very good choice. All the options are good. Just see the curriculum and go for your interest.

IIT-Kanpur is a top ranked college. You should prefer IIT-Kanpur. -
It totally depends on your choice. But in my opinion, just go IIT Kanpur because in this placement is good and is no. 1 institute when comes to ranking.

College mentioned by you are IIT, NIT and IIIT and in these colleges admission will be done on the basis of JEE Mains and Advance latest marks. As this year exam still not organized then maybe this rank is of the previous year but from previous year marks admission is not possible. You have to appear for the exam this year and have to score more marks. -
