You can take a year gap between attempts of JEE exam only in the JEE Mains, not in JEE Advanced. The no. of attempts to attend the IIT JEE Exam is reduced to 3 years.
JEE exam is conducted for the selection of the candidates for the admission into the IITs. know more at https://www.eduncle.com/iit-

For JEE Mains, you have 3 attempts and for JEE advance, you have only 2 attempts. These attempts are including your 12th and graduation year. You can only take year gap for JEE Mains exam and not for JEE Advanced.
