You can refer to Krause's Food Nutrition and Diet Therapy book. Normal and therapeutic nutrition by Robinson and Lawler. Dr. M. Swaminathans food and nutrition and for some basic knowledge and B. Srilakshmi's books will help you (Nutrition Science, Dietetics and Food Science). .
