Do I have to learn coding manually for software engineering myself or will the institute will teach me that I will join after class 12th?

Currently, I am in 11th standard from science field.

Software engineering degrees such as B.Tech CS/IT/SE or BCA or B.Sc CS/IT have compulsory basic course on Programming languages and data structures. I would suggest you to opt computer science as your 5th or 6th subject in 11th standard. This would help you a lot during your programming sessions. By the way the institute will teach you coding. Good luck.
