Poland offers inexpensive education in comparison to other EU countries. While you are allowed to work part time and more during vacations, for job opportunities you need to check the skill shortage list and whether the companies would like to sponsor you. Otherwise, your degree will be valid all over Europe as it's a Schengen visa country.

Though nobody can guarantee, if you will get a job as it depends on the skillset. Poland is a popular country for engineering studies. The universities are doing very well with research activities and are connected with the industry.
