MAT exams are conducted four times a year February, May, September, December. You can apply for MAT every times if you want to improve your previous percentile scored in MAT. There is no restrictions in appearing for MAT. But some colleges will take candidates appeared in Sep and Dec Mat and they will not consider Feb or May Mat scorecards. So better you choose which all colleges you want to apply and check whether they are participating in which all MAT exams.
