I have studied only mathematics in CBSE board and I am giving the CUET exam in maths/applied maths. Do I have to give applied maths?

In CUET, you don't need to pick out Applied Mathematics just due to the fact you studied Mathematics in CBSE.
Here's the breakdown:
If you studied Mathematics in CBSE (Core Maths) — you may pick out Mathematics as your CUET subject.
If you studied Applied Mathematics — you may select Applied Mathematics in CUET.
