I'm pursuing an IB Diploma with chemistry (HL), biology (HL and maths (SL). Can I opt out of physics in NEST?

NEST exam will be based on the course you select. So decide on the course and then you can check the syllabus for entrance.

Yes, I want to pursue a course in biology. My question is whether I can skip the physics paper entirely for the entrance test. Also, is class X physics sufficient for me to tide over the year 1 compulsory physics at CEBS and NISER? Or is it likely that I will find it hard to cope with year 1 physics
