I've completed 12th from NIOS with commerce & have a gap of 2-years between X and XII, can I take admissions in colleges in Canada?

Yes, of course, you can take admission. Some universities will ask for a WES evaluation of your transcripts. Search online to learn more about WES evaluation. Work on improving your profile and take SAT/ACT+TOEFL.
