Is it possible for me to do a course in cookery culinary without attending classes as I am working as sous chef in Dubai from last 7 yrs?

I have done O level from Dubai in British curriculum and had gone for Advanced Diploma course from Australia Melbourne Carrick Institute of hotel management in 2007 but could not complete due to unavoidable circumstances and in 2010, only finished 75%course.
