Is taking science and appearing for IAS exam preferable? or taking humanities is more easier to give IAS examination?

Arnab is right about it. Your strength plays a key role in UPSC exams so go for your strength. And for your second question, I want to say that no subject is easier when it comes to UPSC exam but it makes your preparation easy if you choose history in UPSC exam as it also comes in the general paper

This is a contradictory question. You have to be expert in subject either Science or Humanities. My suggestion is that take the strongest subject as per your capability.
