Is there any kind of obligation on a person doing hotel management from any hotel like Oberoi to work with them only?

Dear Amanda,
There is no obligation, but initially you will get placement in their respective hotel chain only. After getting good experience you can switch over to other hotel chain which totally depends on your choice.
