    Information Technology is about how to organize and manage INFORMATION, e.g. information about Production or Sales or Quality in an enterprise. Though usually associated with software, it need not be - it is about design of pieces of information, which can be collectively organized and managed even manually.
    Software Engineering is about how to engineer (design and create) software. It is independent of what the software is going to be used for - it is only about how code should be organized.
