7 years agoSous chefs are second-in-command in kitchens, reporting to the head chef, overseeing the preparation and cooking of food at restaurants, diners, and other operations where somebody can get a bite to eat. Sous chefs make sure that a kitchen is a well-oiled machine, preparing food, managing the kitchen staff to make sure food prepared quickly and as delicious as possible, and enforcing food safety standards.

The sous' job is somewhere between translating the chef's head-in-the-clouds menu designs and ideas into a workable line progression. At the same time, since most sous manage things like cover reports (how much we sold today) and reservations (how much we'll sell tomorrow), he or she is the center of a kitchen.
A chef is great at being the mediator, too, so that traditional job is out of the window for me (and the kitchen is better for it).
All in all, it's a dream job. Long hours and low pay don't spoil the one thing, your dedication towards your work.
