What's better for placement amid B.Tech (physics) from IIT-Delhi, CS from IIT-Mandi, electronics from BHU & mechanical from IIT-Roorkee?
I've got 239 marks and a rank of 2343 in JEE Advanced 2017.

If you are only concerned about placement then go for IIT mandi CS, but if you are interested in other things and your overall development because at last money is not what you want, go for Physics, IIT delhi or Mech, IIT roorkee.

It is really critical time to decide but there are two ways. Either you go for particular branch irrespective of IIT or you go for good IITs. Choice is yours but I wouldn't advise you to prefer IITs, your branch matters a lot. According to my personal experience, I preferred branch over quality of IITs. And I am glad; I am exploring this fascinating stream for smart grid.

I think you should go for IIT-Rorkee because its placement record is good than any other IITs.
All the best.

Well, if you have Physics, Chemistry, and Mathematics, all three in your Bachelor's degree you should first understand and analyze that which subject you like the most and you are highly interested in. Then devote atleast a year and evaluate the scope of M.Sc in that particular subject, study it and then select the subject. Don't be in a rush, take your time.
