in my personal experience, the technology degree is the one where you get to build the design concepts and test the experiments that the engineer conceived or made the design thought process.

There is aeronautical engineering but there is no aeronautical information technology. It is true that modern aircraft are computer controlled and majority of task are computerized for example, fly by wire controls, warning systems, system watchdog, auto pilot etc. but they are part of avionics.
