MAT has no relation to which specialisation you will take. It is only an entrance exam for getting admission into a college that accepts MAT scores.

There is no particular eligibility criteria for opting a specialisation once you clear MAT. So I would like to request or suggest you to check your undergraduate background along with your area of interest and upcoming markets in that particular field before taking a decision.

Once you write MAT and clear it, then you are qualified to apply for MBA in colleges. It does not mean that you are qualified for a particular specialisation. When you join the college, you can take whichever specialisation you want.
