You can choose any subjects you want because becoming an income tax inspector has nothing to do with your subject. You just need to clear the exam.

For getting into GoI service as an officer under any stream, one needs to appear and pass UPSC exam. Popularly known as civil service exam. Income tax officer is part of IRS.
