Which course is better in terms of salary prospects: ECE and EEE?

ECE definitely have better salary prospects as compared to EEE due to its application in a wide range of domains.

Both have good salary prospects. EEE have more job options in PSUs and ECE is having options in IT Companies as well as core electronic and semiconductor companies.
