Which option would be better for me - civil engineering from BITS-Pilani, CSE from VIT or mechanical engineering from BITS-Hyderabad?

I have got 320 rank in BITS and 25111 in Mains.

As you do not have branch specific interest area, you may opt for VIT for CSE, BITS Pilani campus for BE (Hons) civil and BITS Hyderabad for BE (Hons) mechanical in the order of precedence.

You should take CSE branch in VIT. Today, CSE branch has a very good future.

Hello, I will prefer you to opt for the CSE, as in India, this branch only has the good scope and plenty of jobs for this field. But, if you go for some other branch, then you will find it difficult to get the job.

Depends upon your interest, but mechanical is a core branch, go through the curriculum and see if it suits you.
