It depends actually on the rules of that particular country. As some countries do offer PSW (Post study work visa) options like Ireland, Canada, USA, France, Australia, etc while other restrict like UK, Germany, Sweden, etc. So, you might have to come back as soon as you finishes your post-graduation.

SFU and UBC both are highly ranked universities. However, coop programs at SFU are very well structured to give a maximum learning output to the student. If direct admission isn't possible at SFU, you can consider an option of studying first year at Fraser International College and then study remaining 3 years at Simon Fraser University, which is called a University Transfer Program offered by Navitas group. Getting admission in a college and then transferring to UBC may not give you an assurity about how many credits will be transferred.
