It is just like JEE Mains. You should prefer NCERT books of class 11th and 12th specially for mathematics. Advise you can study with RD Sharma for mathematics and SL Arora for physics. For chemistry you can use Dinesh. Android extra learning you can solve question papers of Oswal Publications. I can give link so you can solve it:

There are two factors that you should consider while deciding where to take admission: the stream
and institution.
If you are not very particular about the stream that you want, then go for better institution i.e. COEP. But if your interest lies strongly in mechanical and you are not getting mechanical at COEP, then you may join WEC.

Canadian universities accepts 16 years of education I. e. 10+2+4. But you can apply for Canadian colleges which accepts 15 years education. You can go for pathway programme through college and them apply to the university. The requirement is the very good academic score and IELTS / TOEFL is required.

Admission is done through counselling based on the rank/ score obtained in Post Graduate Common Entrance Test (PGCET), conducted by Karnataka Examinations Authority.
For Management quota, admission is based on score/percentile in CMAT/MAT/CAT/XAT/KMAT/PGCETor any other entrance test recognized by AICTE, New Delhi.

You can apply for the Certificate course in Nutrition & Dietetics (Distance/Correspondence). The duration is 6 months.
But ideally, it is not legal to pursue two degrees together. If you still wish to pursue it, go ahead but then I would advise to only show one degree certificate at a time.
