If you appear for class 12th exam privately, then you have to enroll yourself in open learning school and they will fill the form and arrange your theoretical and practical papers. They will charge the fees for the same. Otherwise, you have to enroll yourself in some private school and pay their fees.
If you don't want to enroll yourself, then you have to submit form to CBSE and they will conduct the exam, but it is better to enroll at some school or open learning institutes because education board might not accept private exams.

You can pursue a Diploma in teaching, arts, animation, beauty and health and fitness. I would recommend you do Diploma in the field you have a keen interest in along side a proper pre-university and graduation. That way, you can have a regular employment plus pursue your creative hobby as a freelancer.

Since, your MAT score is quite low and you want to make it productive in future to get good paying job, I would suggest you to take the exam again or take this entire year to prepare for CAT/ CET Maharashtra/ CMAT because with the current score, you will get admission, but that won't be worth paying.

Both these certifications are entirely different from each other. Now, considering your prior experience of IT sales, I would suggest you to go for SAP as it will be of great help and it will add value to your current standing in organization. Later on, after working as SAP consultant for quite some time, you can go for CRM.
