As per your query I would first suggest you to complete your class 12th and once it is done you may then opt for BHM (Bachelor degree in Hotel Management)
While pursuing this course you may opt for specialization in:
- Front office.
- Food and beverage services.
- Food and beverages production (cooking and baking)
- House keeping.
As you are interested in becoming chef so you may opt for Food and beverages production (cooking and baking) as your specialization.
Under this specialization you will learn about:
1. Various culinary skills.
2. Preparation of various cuisines food, etc.
In order to pursue BHM you need to be 12th pass from any stream with English as one of the subjects, plus you need to take entrance test conducted by various institutes.
The upper age limit for to pursue this course is 22 years.

What type of books you like to read.They may be the first indicators of your interest. If you like novels and stories only, then you have a tendency to remain in the world of imagination.
If you are interested in reading the newspapers and current affairs, then you have a fertile mind, eager to learn. Find out, which type of news are you interested in-latest technology, politics, international affairs, or simply stories of crime. This will help you analyse your interests.
If you are an adult, and are prepared to face a battery of aptitude tests, I recommend a book called "BE A DYNAMIC LEADER" by JK Kharbanda (Vikas Publishing House), costing about 400/-. It will take at least one week to finish these tests at home.It will indicate your strengths , weaknesses, basic traits, aptitudes and typical type of jobs suited for your type of personality.

In regards to your question, whether there is any difference in Correspondence and Regular course, i would say it varies from one subject to the other also from one degree to the other. However in general a course through distance learning does not have as much value as the regular one so if you can do a regular course, it would hold a lot of importance and thus be a much better option. The acceptability and recognition of a full time course is higher in industry and the long term career gains are good. Correspondence courses are ideally meant for those who are working and cannot leave their jobs to further their education. It is only to leverage ones experience and not so much as a stand alone degree. The employ-ability of a full time degree holder is the most and those with a distance education degree may face a drawback as far as employment options with MNCs are concerned. However, what is also relevant is your experience; skills and profile should match the profile needed for the job and organization. Thus it would be best for you to pursue a full time course.
