Aeronautical engineering is a quite challenging course. In, India at present, there isn't more scope, bit in future for sure after 5 years.
Life of an aeronautical engineer is not as easy as CSE because you must come up with new ideas and projects are left for you if you are an expert. Now to say, this course is very interesting and has good scope abroad.

There was no spot round in 2016 as it led to some problems in the previous years. So I assume that it might not happen this year too. As the newly admitted batch will lag in portion completion compared to the students who got in through other rounds. This is regarding B.Tech.

Yes, it's good to opt for BHM. as you'll get to know about different fields under hotel management in a single course. After that if you want you can go for a specialisation Diploma in a particular field.

Under the domain of Delhi University, there is no college which offers B.Tech course. However, DTU is affiliated to Delhi University, but in 2010 it became a university.
