What should I do as I am a final year student of mechanical engineering and I want to learn production work and engine work?

Actual production process or engine work is something many engineering graduates are not familiar with since hands on training is very rare. But many colleges have now Incorporated such practice in their curriculum. You can apply for and work in a company by way of apprentice. There is a scheme by which Govt reimburses the cost to companies. This perhaps is a way out for you.
