It completely depends on your choice, situation and interest. If you can stay 2-3 more years without any job easily and you really have interest in studies, then go for it. If you need a job right now and if you have a great job option, then don't lose this opportunity.
Yes, this is also an option that you can continue your studies with job. But, I personally think that it will be very difficult for you to do so. Studies and new work, both needs your time and dedication.

It will depend on the university or college. You can contact them, if they accept NIOS qualification. Many colleges do accept, while there are some who do not. It is hard to name any college as the requirements vary and also depends on the student profile.
