It is not possible for you to get admission in any of the NITs, as there are only 9 NITs where the seats are less than 600 in total. And even most of the government colleges have different opening ranks which you have to refer depending upon your choice.

Comparison to the lowest NIT, the placement cell is more active and they do recruitment process from August to June. Placement is good not only for M.Tech CS only but also for all courses at computer Science department but the package is much good for M.Tech AI people. Good luck.

No, you may apply for more than one course, but you can get admitted in only one course of your choice based on the eligibility criteria and cut off. Once you seek admission based on your merit based eligibility you will be required to pay fee for the course and drop the other choices.
