Hello Amal,
Frankly speaking although, Medical Electronics (which is mainly related to designing of medical equipments) will see a growth in the coming years due to the growth in health care business and new technology inventions in the area but as of now the career scope is decent and not very booming. As this is quite a new field in India, there are not many colleges offering this course. However, few of which you can check are: Dayananda Sagar College of Engineering, MS Ramaiah University.
After attaining a degree you would be able to find a job with Hospitals & various medical equipment manufacturers or after gaining some experience

In B.Tech, you have to study all the engineering subjects, But if you opt for B.Tech Hons. Then you have to study only one of the engineering subjects in more depth. So, in B.Tech you have to study all the subjects given by colleges. But in B.Tech Hons. You have to study only one subjects which you like the most and you get specialisation only in one subjects. After diploma in mechanical engineering, you can look for various job options in transport depots/corporations. Railways usually recruit these candidates for the position of Junior Engineer. SAIL, GAIL, etc usually recruits these candidates to trainee level jobs. Technical job positions under central/state government will also be open for you. Assistant/Clerical jobs can also be selected.

Lateral admissions are controlled by state Govts. These are normally allowed in related branch. I feel aviation is totally different than civil & hence your state Govt. may not allow it. But you have an option of seeking admission in any branch in the 1st-year.

As per the UGC guidelines two regular degree courses can not pursue together. However one distance degree course can be pursue together with another regular Diploma course. So you can pursue the MBA distance and PG professional Diploma (regular) courses together.

Pursuing Aerospace Engineering as a specialization in Post Graduation (M.Tech) is indeed a better choice. Aerospace Engineering is a niche branch in India with limited job opportunities at present. However, since you already have completed Bachelors in Mechanical degree, you can apply for jobs in mechanical sector, whilst you can also keep looking for jobs in your desired role in Aerospace Engineering.
