To take admission in Merchant Navy, you need to pass 12th in Science (Physics, Chemistry, Maths) with 1 year pre-sea training as a deck cadet.
You can also join it directly after B.Tech in marine engineering, mechanical, electrical, electronics & telecommunication, naval architect.
If you pursue B.Sc (Nautical Science) in the officer cadre, it will lead you to become captain after 5-7 years of experience.
Except marine engineering candidates, others have to undergo a 10 months pre-sea training which is offered by many institute and port trusts or recruiting company itself. After that you will be appointed as a 5th or junior engineer. It will take 5-7 years depending on your abilities to become 'chief engineer'.

However these are only some of the methods of shortlisting. There is no such authentic one list of institutes that i can give you. All institute branches have same curriculum, like all states in India follow the same constitution. By same comparison all state progress differently and after a certain time the gap becomes huge. You could do well to create a list of places you may want to learn at, whether they are in your city or not. Then go to their websites and research about them, and even call them and talk to them. Try their website for more details. Typically go for a school which offers all the information including faculty on their website. Now shortlist some you want to visit. Do not hesitate to travel - this is about your life and career. After visiting those take a decision for yourself. Even if you have to travel to timbuctoo or chandigarh for that matter, it is important for your life, so do it.
