Hi,
As you have completed class 12th, I would suggest that you do a 3-year degree in Hotel Management rather than doing a Diploma in Culinary arts. In 3 years degree programme you will learn both cooking and management and later you can decide in which field you want to work.
The various exams you need to take for getting admission in hotel management institutes are:
NCHHCT JEE (IHMs)
OCLD
IIHM
Culinary academy of India, Hyderabad
All the best.

IIM, Bangalore, I would say has one of the best campuses, location and hostels compared to any other IIM or management institute in India. The fact that 3 Idiots was shot inside this campus, speaks a lot. There is a new hostel and an old one. While the old one has the charm with great rooms and a lot of hangout spots, the new hostel rooms are much bigger and have their own balcony. So you can't go wrong with either of them. The total fee of IIM, Bangalore is around Rs 20-25 lakhs and varies from year to year.
