Yes, you can take Maharashtra MBA CET exam and apply for MMS course through OMS seats. The cutoff for OMS seats is high and usually, it is 99.99 percentile. You can check the cutoff of CAP round one of the previous years directly through the DTE website or you can visit the below link:

I hope your preparation for JEE is going great.
In reference to your question, I will suggest you to go for the maximum. Do not aim for less. No matter which category you belong to. It is important to define your objective based on a certain percentage of marks like overall, or in particular subjects. Everyday it is important to study in order to be in good touch and practice with subjects, be consistent. Choose your favourite hours either morning or night or combination. Accordingly, plan for " what to study" and " how much to complete" in a day rather than only number of hours. Have a mentor who can review your work and guide you too.

Nursing is a good profession. You can take admission in GNM nursing after 12th pass with 45% marks. It is a 3.5 year Diploma course. If you want to do further studies, you can go for post basic nursing course after the completion of GNM nursing. Better to go for B.Sc. Nursing because its a 4 year degree course.

The cuttoff for Hyderabad and Dehradun will likely be between 62(lowest)-68 percentile. So, if you have percentile more than 62+ you have chances to secure admission.
