The reason being the very high placement rate for particularly CS, PSIT kanpur is a good option, but on the basis of personal experience i will just like to say that the placement rate and the overall opportunities offered are definitely quite good.

If you are not keen interested in computer languages, I don't recommend B.Tech in CSE or IT because in today's world there is a huge crowd of students in CSE and in near future there will be very tough competition in IT field.
So, think twice before taking CSE or IT.

Yes, you can but you need to keep in mind that you need dedication for MBBS because there is very tough competition in that field. You can prepare by taking coaching too. It would be easier to go for BA or MS course, which has comparatively less competition, but if you can setup your own clinic then sky is the limit and you can earn more than in MBBS.
