1. If you are interested in quantitative and statistical analysis, then learn SAS.
If you are not so mathematically, and statistically oriented, and would rather be doing jobs such as project management, business analyst, then go for SAP.
2. I would say that SAS is more about statistics and is a reporting tool/language. SAP on the other hand is does just about everything from Human Resources to Accounting and splits Accounting into General Ledger, Accounts Payable/Receivable (Finance in SAP speak) and stock control (Logistics in SAP speak).
