First of all congrats for securing good score in JEE Advanced, now coming to the choice of branches, you might not get branches like CS, especially if you are from general category. Briefly study the core subjects of all the branches, discover which subjects interest you. IT is very important to pursue a branch of your liking- you have to study it for 4 years and apply it's concepts in real life. Read about the branches and find out what you like.

There is a separate entrance test for UPES known as UPESMAT for MBA candidates which is conducted at a particular date but this test can be postponed for special cases like you have and to get more clarity. I recommend that you should contact their officials for more details on this matter.

The eligible candidate who is looking for an admission to this college shall appear for 'Online Entrance Exam'.
You need to purchase the prospectus and enrollment form or you can download. Fill the enrollment and declaration form with correct information.
The prospectus has to be duly signed in token of acceptance of the rules and regulations. Along with the mentioned forms, enclose the required documents (refer to the link http://www.iibm.org.in/admission-procedure.php).

Metallurgy and Aerospace, both these branches are in a way specialised. Placements in both are little tough. But I feel Aeronautical Engineering has better scope in future India and hence I would advise you to take it before metallurgy.
