Hello,
If you have the specialization in particular field say for example finance, then also you are allowed to sit for companies coming for other field like marketing or operations. But if you have done your major in finance why would you sit for a marketing profile. Rest depends on the companies what they are looking for.
Stipend is given by all the companies coming here.

It depends on so many factors which are relevant to you. I can tell you about VJIM. It is one of the best B-schools in Hyderabad which gives optimum return on investment considering the fees and average salary package of the placements. You can either do a BBA in Airport management or choose to do a course in Travel and tourism or hospitality industry. courses like air-hostess / ticketing / ground staff are some of the well know courses.
