The answer for this question may differ from person to person. If you think it from employers point of view whether a govt organisation or private, the person with one sitting degree would hold very less chances of getting employment. If you just want to have a degree then you probably can opt for it. Another option could be that you try Open Universities like IGNOU or Karnatka Open University. For the back log of 12th you can contact National Institute of Open Schooling.

I have a different view the offer hence will write in detail.
The selection in VLSI happens in the following stages:
1) Resume Shortlisting
2) Written test with 50% weightage to Aptitude and 50% on digital and CMOS basics
3) One or many rounds of Technical interview
4) HR Interview
The resume shortisting is mostly done by HR and not technical department. The HR does the shortlisting based on %marks, college etc. 90% or more companies have cutoff of 60% for BE. Hence getting job in VLSI will be very difficult if not impossible.
My recommendation is to do M.Tech and ensure that you CGPA is greated than 7 which is easy if you are reg

You should opt for some short term courses in VLSI and/or Embeded Systems to further enhance your Electronics fundamentals.
The option for MBA isn't bad but do choose the college wisely. And the streams of MBA is what you should choose based on your own interest.

As per my understanding, easy or difficult is ones perception and nothing more, but if you are not keen to pursue B.Com, you may try for other options like B.A., Law, Animation etc depending on your interests and career aspirations. For most of the undergraduate programs you would be eligible for the distance courses rather than the regular courses.
