You can do any specialised field diploma and settle abroad in New Zealand. After one year study visa you will get one year work search visa. Once you get a job you will get two year work permit and then you can apply for PR.

I think Diploma in mechanical engineering is a 3year course and you have to complete it. And, after that you are eligible for lateral entry.
