Yes, you can pursue AI after IOT specialisation CSE branch. After IOT specialisation, you may get a very good job as IOT is a very hot emerging field due to the digital initiative. IOT and AI if both comes together can be merged into one and the technology will be more hot than anything. Both are very good Technology to learn and pursue one's career.
