As I study in IIT Hyderabad, I will be focusing only on IIT Hyderabad in my answer. You will have to ask students from other colleges for the whole picture. Mech in IIT Hyd is pretty decent with many of my friends going to Purdue University, Boeing, DRDO and many reputable places for internship. While I won't say that IIT Hyd has excellent placement statistics for mechanical, it certainly is improving year after year and has shown good promise. As is true with mechanical course at every institute you require higher education to bag a decent job. The prospects of higher education from IIT Hyderabad are really good, with our alumni presetly continuing their masters and PhDs from various well known institues both in India and Abroad.
Also IIT tag will certainly have certain advantages (they may be available in few NITs too, I am not aware of the scenario there). Choose wisely.
