I don't think you will be allowed to pursue another regular course along with the one that you are currently studying. However, you can pursue a part-time course or a course from distance mode. For being a pilot, you should be 17 year old, passed class 12th with Physics and Maths with at least 50% marks.
After that you have to go for Medical test class 1 and class II.
After clearing Medical, you can join any flying clubs in India for flight training and ground classes.
With this training, you have to clear 6 exams of DGCA to get Indian Commercial Pilot license.

AME is a niche branch of engineering in whichever you are only eligible for aircraft servicing and maintenance jobs. You will get very little aircraft design exposure. Scope is limited to a smaller industry. Aeronautical engineering has wider scope. Therefore, it will better if you do aeronautical engineering in place of AME.
