For short term courses you can either join ITI or FCI after which you can get a job in any Hotel Kitchen but your career would start from a lower designation /Level.
Few of the other prominent institutes providing courses to become chef:
National council for hotel management and catering technology
Delhi institute o hotel management

Amity School of Hospitality

Yes it is a good University, however I would be glad to introduce you to some of the best Universities in China. If you have good percentage in your 12th and have decent amount to spend, then I would suggest better Universities than the Southern Medical University :
