All of the courses / streams you have mentioned here are in demand in the market right now.
But you being from EC stream, should continue with VLSI and/or Embeded System, as these are evergreen and hence always in demand from best of the Electronics firms.
Computer N/W and Internet Engg will switch you to IT related jobs, and it may prove difficult for you to cope up. Take these only if you are highly interested in the IT field and Networking domain.
Digital Electronics / Comm. & N/w though are good ones but VLSI and Embeded are better in terms of job prospect.

Firstly, if it's possible then opt for regular degree and not correspondence. But don't worry if you haven't any other options at present. You can later on continue doing masters from a good colege.
Also talking from job point of view, CCNA is networking certification and is considered a job oriented course. But I would advise you to do CCNP after CCNA.
Also if possible do MCSE + RHCE after CCNA as this combination will make your profile stand ahead from quite a number of colleagues of yours, and so will help you with the job too.
This combination of CNA + MCSE + RHCE will help you get a good job in Administration & Networkin
