Though both fields offers better future perspective, a lot depends on your interest. Curriculum wise both branches are rigorous and require sincere efforts. Admission for Civil would be easier compared to Aerospace due lesser competition & more colleges offering this course.

Job in this world with high competition is not easy to get and you are not studying in IITs that you get sure job after your B.Tech for these type of college you have to study hard so that your overall marks after 4year above 8.5cgpa then after you get placement inside if company came in the college if not then you get job outside with this marks easily.

See, placements depends on your CV academics and work ethics. GITAM is a fine doing college, but no institution can guarantee you a placement, unless you work towards achieving your goal.

I will talk in terms of placements and brand recognition of SASTRA among companies in India and International.

If you want to end up with your core subject as mechanical then prefer it first but as per the campus ranking IIT, Kharagpur is better than Guwahati but I'd suggest you to do mechanical from II, Guwahati.
