First of all, i would like to share with you that you have a very good profile and have a chance of making it to the top universities. I would try to answer your questions in points:
1) Job prospects are good. However, i cannot give you any specific data to prove the same because job prospects are more university specific. We need to finalize universities first, only then can i provide you with data.
2) VLSI design comes with Electronics as well as Mechanical. Which field are you interested in? Please let me know.
