There are many courses on offer for electronics stream out of which VLSI design, Embedded Systems being more popular.
Except these there are Radar, Microwave Electronics, Signal Processing , Sound Engineering, Digital Techniques, etc.
But I would suggest you to first opt for the PG degree to increase you profile value in the industry and get a better job. You can pursue these kind of course in parallel to your PG degree too.

It's always recommended if you can pursue MBA from regular mode as correspondence mode will give you almost no exposure to the real time environment and you are sure to miss out countless opportunities too.
Also from the companies' point of view, they value the regular degrees much more than correspondence ones.
But if it's not feasible for you to do regular degree then from distance mode you can opt for Symbiosis Institute, check http://scdl.net for more details about them as theirs correspondence is one of best known.

First you should focus on doing the masters degree like MCA/ Msc IT to increase your value in the software industry as a fresher.
Also as you asked you can pursue courses in parallel and there are a lot of options as i am listing below the most prominent ones from the job point of view:
1. Java/J2EE - The server side software development of web is mostly done by this most secure language option. Most of the banks in India and abroad implement their web applications using Java/J2EE only.
