Yes, it is absolutely easy and possible to appear in SAT for a PCB student as the Quant or Maths which is there is an extension of what you study in class 6,7,8,9 or 10th. While in India a good number of students do not take Maths in class 11 and 12th, they may still do SAT well by practising Maths. So, I assure you that it would not be much difficult for you either.
